Homemade Tomato Basil Soup
Fantastic recipe to have a quick tomato soup with less sodium than the usual condensed varieties. Pictured with Pesto Grilled Cheese and garnished with fresh sweet basil. (You can buy basil seed seasonally at Aldi.)
28 oz. can of SimplyNature diced tomatoes (USDA Organic)
1 stalk celery, chopped
2 T diced onion
1 T Stonemill Essentials Dried Basil
1 c. Friendly Farms Whole Milk
salt and pepper to taste
1. In sauce pan over medium heat, cook tomatoes, celery, onion, and basil until steaming.
2. With an immersion blender, blend until smooth. (You can also transfer to a traditional blender.)
3. Add milk, salt, and pepper and heat over low heat.
*Serve with grilled cheese sandwiches. Freezes nicely in mason jars.
