Happy Mother's Day and a big thanks to my mom for this recipe! Freeze the leftovers for a quick and easy weekday lunch.
Serves 6, Cost per serving $.28
Ingredients
1 lb. Dakota's Pride Split Peas, rinsed and sorted (available seasonally)
8 c. water
1 onion, chopped
4 carrots, peeled and chopped
4 stalks of celery, chopped
1 tsp. oregano
1/2 tsp. parsley
1 tsp. sea salt
1/4 tsp. black pepper
Directions
1. In a slow cooker combine all ingredients.
2. Cook 8 hours on low.
3. When the peas are soft, use an immersion blender or masher to blend about half of the soup leaving some chunks for texture.
