This one is a family favorite (Thanks Ann!) and seems to be served at those non-holiday get-togethers because it's a fairly simple recipe and a crowd pleaser. Also a one-pot dish, which I always love when it comes to washing dishes. Picture Coming Soon! We ate it all up before I could get a photo - whoops!
Serves 6, Cost per serving $.91Ingredients
2 T. Carlini Olive Oil1 onion, chopped
3 stalks of celery, finely chopped
3 cloves of garlic, minced
1 can Benita Diced Green Chilies (with the liquid)
4 c. chicken stock
2 c. cooked chicken - more or less fine
2 tsp. Stonemills Essentials Cumin
2 tsp. Stonemills Essentials Oregano
3 cans Dakota's Pride Great Northern Beans (with the liquid)
Benita Tortilla Chips and Friendly Farms Sour Cream to garnish (opt.)
Directions
1. In a large sauce pan or stock pot sauté onion, celery, garlic, and chilies in olive oil.2. Add the chicken, stock, cumin, and oregano. Bring to a boil and then down to simmer.
3. Add the beans about 15 minutes prior to serving.
4. Garnish with a dollop of sour cream and tortilla chips.
