Of course you could always substitute turkey for chicken recipes like Chicken Pot Pie or White Chicken Chili but we thought we would add a few more turkey ideas to the collection. This turkey enchilada recipe was a hit at Carolyn's house and is forgiving in the amount of turkey you use, so if you don't have quite enough don't worry.

2 T. butter
1 onion, chopped
1 can cream of celery or cream of chicken soup
1 small can diced green chilies
2 c. cooked turkey (or chicken) pieces

1 tsp. chili powder
8 flour tortillas
1-2 cups shredded cheese (cheddar, jack, etc.)

1. Mix soup and sour cream in bowl.

3. Put about ¼ cup of the soup/sour cream mixture in the bottom of a 9x13 casserole dish to prevent sticking. 4. Spoon mixture into tortillas and roll and place seam side down in dish.
5. Spread remaining soup/sour cream mix over the top of the tortillas, sprinkle with cheese and bake at 350 for 25 minutes.
