Shrimp Creole

My mom always made this growing up and it was one of my favorites. My sister even had her recipe printed onto fabric and made into a tea towel one Christmas.


1 green bell pepper, finely chopped
1 medium onion, finely chopped
2 stalks of celery, finely chopped
1 clove of garlic, minced
1 T. olive oil
3 oz. can of tomato paste and 3 cans of water
1 pinch red pepper
1 tsp. parsley 
1 tsp. sugar
1/2 tsp. salt
12-16 oz. raw, deveined shrimp, peeled
4 c. cooked rice


1. Heat oil in a skillet. Saute bell pepper, onion, celery, and garlic for five minutes.
2. Remove from heat and add tomato paste and water.
3. Stir and return to heat. Add red pepper, parsley, sugar, ans salt. Cover and simmer for 25 minutes stirring occasionally.
4. Add shrimp and cook for 5 minutes more.
5. Serve over prepared rice.
