This is so super simple and is a go-to for BBQs and Potlucks. The recipe is sized for a potluck or party, but it is easy to adjust for a single serving. (will update picture when I make for this 4th - the one pictured is made with dried cranberries for the fruit since that's what I had on hand). Strawberries and blueberries are a decent deal right now at ALDI.
Ingredients
Salad:
1 bag spinach leaves (the big bag at ALDI or 2 of the organic boxes)
1 c. fresh quartered strawberries
1 c. fresh blueberries
1 c. slivered almonds (in the baking section at ALDI)
1 container crumbled feta
Dressing:
*Specialty Selected Gour

1 T. minced onion
1/4 tsp. paprika
1/2 c. white wine vinegar (seasonally available in the Priano brand)
1/2 c. olive oil
1/2 c. sugar (or equivalent powdered stevia for baking)

Directions
1. Place spinach in a large serving bowl. Sprinkle strawberries, almonds, and feta on top.
2. Mix dressing ingredients in a smaller container with a tight lid. Refrigerate for at least an hour prior to serving. Pour dressing on when ready to serve.
