Red, White, and Blue Parfaits
I know I always post these things too late for people to put on their holiday menus, but this was our Independence Day breakfast today. These would be awesome for a brunch or a healthy dessert and could be made ahead of time - just leave off the granola until you are ready to serve. I just discovered the SimplyNature Organic Yogurt at ALDI and it is awesome! My 6-year-old asks for it for dessert rather than ice cream!
Vanilla Yogurt (I used the Whole Milk Organic Vanilla Yogurt at ALDI)
Strawberries, trimmed and quartered
Granola (I used homemade from 100 Days of Real Food - just omit the sunflower seeds and pumpkin seeds if you are shopping at ALDI or buy the prepared granola at ALDI)
1. In a clear cup or dish, layer blueberries to 1/3 the height of the cup. Next sprinkle granola.
2. For the next layer, spoon in yogurt with a teaspoon being careful not to smear the sides of the glass. Fill to 2/3 the height of the glass.
3. For the top layer, fill with strawberry pieces. Top with another layer of granola.
