Heatless Meals

That's right, heatless, as in I didn't have to heat up my house by using the oven or stove! This is a big deal when the heat index is well above 100 and the air conditioning seems to be constantly running to keep up!

Meal 1: Shredded Chicken Bacon Ranch Wraps or Sandwiches

  • 3 Never Any Chicken Breasts
  • 1 pks Ranch seasoning
  • 1 or 2 chicken bouillon  cubes
  • 2 slices Never Any Smoked Bacon
  • 1 cup of water
Directions: Place Chicken in slow cooker, cover with Ranch, place bacon over the ranch, put bouillon cubes in bottom of slow cooker, pour in water, cook on low for about 8 hours or until chicken is done. Remove chicken from slow cooker and shred.

For a Wrap: I like the Fit N Active wraps, any of them. Place shredded chicken in wrap and top with lettuce, tomato, avocado, cucumber, and salsa (this is how I like to prepare mine). Wrap and serve...delish!  

Pretzel Bun Sandwich option: Slice pretzel bun, place shredded chicken, tomato, lettuce, and cucumber, and a slice of cheese (this is how my son and husband like their sandwich). 

My Daughter's Choice: Place shredded chicken on plate and eat as an entree'. 

I served this with shells and cheese and watermelon. 

Meal 2: Chicken Nachos/Burrito/Soft Taco
  • 2 or 3 Never Any Chicken Breasts
  • 1 pkg taco seasoning
  • 1 chicken bouillon cube
  • 1 cup water
Directions: Combine ingredients in slow cooker and cook on low for about 8 hours or until chicken is cooked. 

Pinto Beans ( I think Katie may have a refried bean recipe posted that's similar to this one)
  • about a third of a pkg of pinto beans
  • 1 T bacon grease
  • 1 Onion (quartered)
  • 1 T Cumin
  • 1 T minced garlic
  • Water
Directions: Rinse beans then cover in water and add ingredients and cook on high for 8 hours. This is the lazy version, as I didn't rinse the beans overnight and I omitted the jalapeno pepper. 

Other ingredients: Tortillas, salsa, diced tomato, diced avocado, tortilla chips, shredded cheese, salsa

Meal 3: BLT's 

  • Never Any Smoked Bacon
  • Romaine Lettuce
  • Bread (or tortilla)
  • Sliced Tomato
  • Mayonaise or Miracle Whip

Directions: Cook bacon in microwave (in order to maintain a heatless meal) or in the skillet, slice tomato and lettuce, toast bread (or heat up a tortilla if you prefer a wrap like my daughter). My family doesn't care for dressings on much of anything, so spread miracle whip or mayonnaise on toast. Place bacon, lettuce, and tomato between the two pieces of toast...Enjoy. Or..if you prefer the wrap, place all ingredients in tortilla, roll up and enjoy!
